Farmers’ Market Veggie Juice


Farmers’ Market Veggie Juice
  MAKES 4 SERVINGS
 
 
   Start the day with a fresh, vitamin-packed drink based on produce at its seasonal peak. You can use tomatoes, zucchini, cucumbers, and/or yellow squash. Spinach, kale or Swiss chard, and carrots also blend beautifully in this drink. Fresh vegetables supply an abundance of nutrients and are low in calories. Salsa adds a little spice to this veggie juice.


¾   cup chopped walnuts

1½cups chopped tomatoes

2   tablespoons mild or hot salsa

1   red bell pepper, seeded, deribbed, and quartered

2   small zucchini, coarsely chopped

1   green onion, including green parts, coarsely chopped

1   stalk celery, chopped
½small jalapeño chile, diced

Juice of ½ lime
1   teaspoon stevia granulated sweetener

1   teaspoon freshly ground black pepper

⅛teaspoon ground cloves


    Working in batches, combine all the ingredients in a food processor and process on high until finely chopped. If necessary, gradually add a little water to reach the desired consistency.
