No-Salt Spice Mix
 MAKES   ABOUT ⅓  CUP
 
 If you’ve been advised to cut down on salt, this spice mix, which is easily multiplied, is perfect for you. Use it instead of the salt and pepper called for in the savory recipes in this book. (Sprinkling cooked foods such as fish, vegetables, and soups with 1 teaspoon of lemon juice or apple cider vinegar is another excellent way to replace salt without sacrificing flavor.)

2    teaspoons ground cumin

1   teaspoon ground coriander

1   teaspoon salt-free lemon pepper

½teaspoon ancho chile powder

½teaspoon sweet paprika

½teaspoon ground cinnamon

¼   teaspoon ground allspice

¼   teaspoon ground ginger

⅛teaspoon cayenne pepper

⅛teaspoon ground cloves


 Combine all the ingredients in a bowl and mix well. Store in an airtight glass jar in a cool, dark place for up to 6 months.
